Steam or boil the cauliflower florets until they are very tender, about 10-12 minutes. They should be easily pierced with a fork.

Drain the cooked cauliflower very thoroughly. You can even gently press it in a colander to remove excess water, which helps prevent a watery mash.

Transfer the drained cauliflower to a large bowl. Add the butter, softened cream cheese, heavy cream (or sour cream), garlic powder (if using), salt, and pepper.

Mash the mixture using a potato masher, an immersion blender, or a food processor until it reaches your desired creamy consistency. Be careful not to over-blend if using a food processor, as it can become gummy.

Taste the mashed cauliflower and adjust seasonings as needed, adding more salt, pepper, or garlic powder if desired.

Serve hot, garnished with fresh chopped chives if using.
